Spotted Bear Ranch in a full-service fly-fishing lodge situated on the edge of the Bob Marshall Wilderness. The lodge consists of a kitchen, client dining room and lounge. In addition, there are 6 rustic guest cabins. Clients are served made to order breakfast, bagged lunches on the river, cocktail hour appetizers and a plated dinner meal. The entire hospitality crew consists of 4, a chef, kitchen assistant and two front of house servers. We are a small operation, and everyone is expected to wear many hats. The kitchen assistant will work under the guidance of the Kitchen supervisor/chef.
This position will be responsible for assisting in all kitchen duties. Assistant may be required to prep meals without direct supervision on a case-by-case basis. Assistant must have a good working knowledge of hygiene and safe food handling standards. Kitchen serves 3 meals per day to both clients and staff. Expect to serve on average 10 clients and 12 staff, with client numbers varying.
Compensation is monthly salary starting at $2300 DOE. Room and board are included. The season runs mid-May-September. This is a short season. You will work long hours with no scheduled days off. Time off will occur as client bookings allow.
Duties: • Ensuring the food preparation areas are clean and hygienic. • Washing utensils and dishes and making sure they are stored appropriately. • Sorting, storing and distributing ingredients. • Washing, peeling, chopping, cutting and cooking foodstuffs and helping to prepare salads and desserts. • Disposing of rubbish • Organizing linen laundry • Cleaning the food preparation equipment, floors and other kitchen tools or areas • Assisting with the plating of meals as service progresses • Preparing bagged lunches/sandwiches for guided fishing trips • Prepare morning coffee bar prior to client’s arrival at lodge in morning. • Drive to town for groceries and supplies. • Assist wilderness crew in minor food prep for upcoming trips. • Maintain beverage inventory. • Assist chef and other kitchen staff as assigned.
