On the coast of the picturesque Chisik Island at a historic turn-of-the-century cannery, our lodge is a gateway to the wonders of the Alaskan wilderness. Our primary attraction is bear viewing, and we offer guests a unique opportunity to experience the beauty of Alaska up close.

As one of the sous chefs at our lodge, you will be responsible for assisting the chef in crafting a memorable dining experience for our guests. You will help serve buffet-style meals for groups ranging from 30 to 50 people from a week-long rotating menu that highlights Alaskan seafood, including sustainably harvested halibut and salmon. In addition, you may need to prepare meals that are suitable for on-the-go service as bear viewing excursions depend on the tides.

Responsibilities:

  • Collaborate with the Head Chef: Work closely with the Head Chef to prep and create dishes, and ensure the overall success of the kitchen.
  • Kitchen Management: Participate in day-to-day kitchen operations, including food preparation, cooking, dishes and clean up.
  • Be part of a Team: Contribute to a positive and productive working environment.
  • Inventory Management: Monitor and manage kitchen inventory, including ordering and stock rotation.
  • Adherence to Health and Safety Standards: Ensure compliance with all health and safety regulations and maintain a clean and organized kitchen.
  • Communication: Effectively communicate with kitchen staff and management to ensure smooth coordination during service.

Qualifications:

  • Proven experience as a Sous Chef or in a similar role.
  • Culinary degree or equivalent work experience.
  • Strong communication skills.
  • Ability to adapt to changing schedules due to tides and guest activities.
  • Knowledge of culinary techniques, cooking methods, and best practices.
  • Ability to work in a fast-paced environment and handle pressure.
  • Organizational and multitasking abilities.
  • Creativity and a passion for delivering exceptional culinary experiences.
