We would love to find a chef with baking and pastry experience for breakfast, but not a deal breaker. This is a hands-on position for a professionally trained chef with a wide range of recipes, and culinary skills, who can prepare meals from scratch; who takes pride in the creating, plating, and garnishing of every dish that leaves the kitchen. This is without a doubt, the most important position at our lodge. This is a position for a chef with a good attitude, who is HIGHLY organized and has a wide range of culinary skills. We seek a Chef with a strong work ethic, who can interact, supervise and communicate, and get along well with others is a good fit. The food that you prepare must be high quality, delicious, and presented professionally and beautifully. You must be able to accommodate a wide range of dietary needs, and be able to prepare delicious high-quality meals for 20-35 guests, and family style meals for 10 staff. This is a demanding position, so it is important to be in good mental and physical condition, and not a slave to substances. The ability to create great dishes from scratch and plan a set menu with your recipes and the company's recipes is essential. A stable, fun personality, positive leader, team player, organized, clean, and physically able to perform the demanding tasks a chef is required to perform.....are all qualities we look for in a candidate. Current Serve Safe certification is required (we can help you get this certification).
Previous lodge experience in Alaska is a plus but not required. This is a salary plus tips position.
Our season runs from May 15 - September 30. Housing and meals are provided.
Qualifications
- Requires 2-3 years of experience in a related position
- Requires advanced knowledge of the principles and practices within the food profession
- Requires experiential knowledge of management of people and/or problems

Responsibilities
- Take a hands-on approach in focusing on team development, culinary expertise, safety protocol, and client relations
- Our Chef Manager will also play a key role in helping us meet budget requirements and execute company-delivered programs
- Train and manage kitchen personnel and supervise/coordinate all related culinary activities
- Estimate food consumption and requisition or purchase food
- Select and develop recipes as well as standardize production recipes to ensure consistent quality
- Establish presentation technique and quality standards, and plan and price menus
- Ensure proper equipment operation/maintenance and ensure proper safety and sanitation in the kitchen
- Oversee special catering events and may also offer culinary instruction and/or demonstrate culinary techniques
